Bornholm
Locally made high-quality ingredients are the basis of every bread baked at Nyker Brød. The grain is cultivated on local farms, after which Valsemøllen in Aakirkeby grinds and labels the fresh organic flour specifically for the bakery in Nyker. Nyker Brød also works together with a number of other Bornholm suppliers: Den Gamle Skole (honey), Bornholms Andelsmejeri (dairy products), Bornholmeræg (eggs) and Lehnsgaard (Bornholm's famous rapeseed oil). Bornholm's unique natural features ensure that the products are naturally wholesome, a standard which local suppliers protect and refine by painstakingly preserving their products' natural qualities.
Nutrition
Nyker Brød spotlights nutrition by using nutritious vegetable oils and whole grains to make crispbread baked at Nyker Brød a wholesome choice. For example, Nyker Brød ensures that the saturated fat content of its bread products never exceeds three per cent. Sugar is not used at all, except in the biscuits, that is!
Organic
Nyker Brød is an organically certified bakery where top quality is hand in glove with organic quality. Bornholm's pristine nature is so uncontaminated that you can actually taste this in the ingredients. The close cooperation with local suppliers ensures the full traceability of the products. All organic ingredients are supplied by local producers. In 2007, Nyker Brød converted to organically certified production as part of a natural development of the company. Nyker Brød was certified pursuant to the EU's organic certification scheme as of 1 December 2007.
Tradition
Nyker Brød's production process is based on old, recognised methods of craftsmanship. Many of the recipes have been handed down from generation to generation, and the bread, crispbread and biscuits are baked with the same affection and care as "back then".
In the sweet yuletide season, Nyker Brød upholds an old tradition where master baker Peter bakes biscuits using Bornholm butter according to the old recipes of his great grandmother. The Christmas selection also includes gingerbreads filled with Bornholm honey, boiled and stored over the months. Here, the top priority is Christmas cheer - not nutrition. If nothing else, Nyker Brød's Christmas goodies will nourish your spirits!
The bakery in Nyker Hovedgade is fond of tradition. Fine old recipes are kept side by side with newly developed ones, but old and new alike are baked and packed by hand. The bakery, too, has kept its original appearance, exemplified by continuing the practice of hoisting big sacks of flour up to the original flour loft.

Although Nyker Brød upholds tradition, it stays at the cutting edge when it comes to developing new products adapted to consumer wishes and needs.
